I managed Settler and oversaw its continued construction, development, and marketing. Jimmy was a constant inspiration. He became friends with my mother’s best friend, Pam Edgson, who bought an apartment on an adjoining lot at Settlers’ sister hotel, the Sandpiper. It was there that the Walkers opened their first Best of Barbados Boutique.

I remember an eventful evening when Jimmy invited some guests to a private dinner at Settlers. I catered for them in Villa Eight, a spacious and well-equipped villa ideal for self-catering. My assistant manager and I cooked in the comfort of the kitchen while the guests drank wine and cocktails in the open terrace garden.

Dinner was served as they sat around the big redwood table in the dining room. All went splendidly until we ran out of wine as the dessert was served. I filled glasses with Kirsch, a brandy-like liquor of 75% proof. It is ideal for sipping after dinner but far too strong to drink as wine. We ran through several bottles that night, with all commenting on the beautiful dessert wine. All were very happy as they left, saying we must do this more often.

Kirsch: Originating from the Black Forest in the southern part of Germany, Kirsch is a type of brandy made by double-distilling the fermented juice of the sour morello cherry.
